1. I never prefer it

Personally 2, but looking into how our eyes work, this will tell us that we should all be looking at colorized images.. Cones > Rods... https://www.cis.rit.edu/people/faculty/montag/vandplite/pages/chap_9/ch9p1.html …

Not sure I understand -- the limitation has to mainly be in the image content (fps, lateral resolution) and not in the retina (rods, cones). And that sepia colour can't possibly add any more content to the image than what's already there. So for me, it's always 1.

Actually that assumption is not true. While the subject image quality plays a part, how your eyes process and your brain interprets is equally to much more important. Rods process black and white and are actually very inefficient. Cones process color and are much more effective
