What is the crankiest (maximally cantankerous in flavor) mustard?

Does this question extend to mustard in combination with other flavors, or just traditional mustards?

It could. The parameters are flexible. (I have a eventuality to prepare for which calls for a crankiest mustard)

Alright. What are the variables, then? What makes a mustard properly cranky? My initial guess would be to max out bitter and sweet tastes. But what about spiciness?

Well, so I think about flavor in more or less ayurvedic terms: you've got sweet, sour, salty, pungent, bitter, and astringent. A cranky/gnarly mustard, I imagine, would be pungent, bitter, and sweet (in that order).

I guess maybe a lightheartedness as well: it's from a name anagram.

Apple cider vinegar, mustard seed, garlic, sichuan flower pepper, salt. Not sure about preparation, but I'll look into it.
