What is the crankiest (maximally cantankerous in flavor) mustard?

Well, so I think about flavor in more or less ayurvedic terms: you've got sweet, sour, salty, pungent, bitter, and astringent. A cranky/gnarly mustard, I imagine, would be pungent, bitter, and sweet (in that order).
