I understand this, and wouldn't bother among people who understand how science works. Here we have people who have different concepts of “scientific theory” and “believe“ that give wrong associations. I don't want to pick on the word “believe” but on the mindset.

To be honest, I don't get too uptight about people using the word "theory" to mean a "guess" anymore, except when they try to dismiss a scientific theory using that definition (or something like it), as in "evolution is just a theory."

No, it's a worthy distinction and should be preserved. The usage suggests that belief is equivalent to understanding or knowledge. It results in otherwise intelligent people professing certain beliefs - unable to distinguish ideology from facts and data.
