If humans didn't exist, the scientific principles that govern the universe would still exist, oustide any bounds of social construct. A single neutral non-human observer would return scientific observations that are not (and can never be) socially constructed.

Yes, but there wouldn't be science without observers to interpret the universe. That doesn't mean it isn't an incredibly powerful tool. It's just a fact. You said without observers science is just science. Now you are moving the goalposts. No observers, no science. Period.

You at first said that without observation, science is just science. Then you changed that and said that if there is only one observer, their observations are not socially constructed (goalposts moved). Now you are asking does the universe exist with no observers. Try again.

Science continues even if there are no conscious observers. If everyone in the world died of COVID-21 tomorrow, the scientific principles that govern the world would continue, unobserved.

The Universe continues, but not science. Science is a way to investigate the universe, and also the accumulation of theories and hypotheses that that investigation results in, but it is not the Universe(s?) or the processes that the Universe follows. No observers, no science.

Well, I disagree. Science is a collection of rules that the universe follows, regardless of observers. If wildlife survived following our mass-extinction, the rules of science humans discovered will still govern them even if they can't understand it.

The universe does not depend on an observer being present for it to exist. All observations or conclusions that can be reached by scientific method also already exist, even if they have not been measured or labelled.
