Sooo.... If a student runs up with a bloody stump where their arm should be and starts screaming "The teacher ripped off my arm!", and then the teacher comes up with behind them and starts beating them with their own arm, the kid gets detention? Hypothetically, of course.

Sure. The various child sex abuse scandals have taught us exactly that - never believe the kids; even if you believe them don’t show them you do. Support the people with authority no matter what. It’s the best way to raise healthy, well-adjusted kids! *sarcasm*

A lesson in teaching children honesty!
You should default to backing the teacher, but not blindly. Yes, in the majority of cases a teacher "picking on" a child is only reacting to the child's behaviour, but there are bad teachers and they don't deserve automatic protection.
No one has absolute authority. A friend’s child got bullied by her teacher. He knew she was embarrassed when he made fun of her, so he’d call her to the front of the class to tease her. This was just 2 years ago. No teacher gets absolute authority.
