Would an exposure to a sick patient with measles generate the long-lasting immunity for a vaccinated doctor? Would it make sense to get one MMR, test antibody titer, and expose to a natural pathogen? instead of 3x MMR?

No, because of the risk of actually getting sick. And if you get sick then you get immunosuppressed. That’s a lot of risk when you could just get the second shot.
