It is worth noticing that the Arabs expanded a long way in all directions except one: their own NW. They pushed east to occupy our S Pakistan, crossed the Caucasus into Central Asia, and west to the Pyrenees and into Francia; but the lands beyond the Taurus Mtns they never held.

Indeed. But not conquered. In the case of Francia and Central Asia they halted because (i think) they ran out of steam. Cf Talas 755. Whereas in the Syria-Anatolia sector it was the 'passive aggressiveness' of the Byzantine Thematics that held them out.

I expect by 'Arab world' Mr Stentz meant the Caliphate. Setting aside the polemics: yes it took centuries before Arabic became the majority tongue in Syria, Egypt and the rest. Unsurprising.
