If the security guard were to be injured while engaging the suspect, the payout for that employee could be vastly more than the value of the stolen items. In these situations they are told to sit back and watch, lest they be fired.

They prevent what they can either by early identification or straight up confrontation. They assess parts of the store too. Looking for blind spots make sure security tags are on. They also do all the paper work for corporate on the thieft.

There just legalities to these interactions. Often we told we can not touch a suspect but nothing says we can't touch our property. Which he did try. Shame in the end.
