Traditional North Jersey Italians (not to be confused with traditional Italians) know wtf is up when it comes to carbohydrates.

That is what I thought from my experience growing up in NJ... it wasn't until the last several years that I had "traditional" Italian and was like excuse me where is my pasta with a side of pasta?

Haha. Yep. If you leave and you don’t feel terrible, it was not NNJ traditional.
