I have a @ProjectJupyter lab instance bound to a permanent port that I've used for about two years now. One folder has daily notes; another one called scratch gets cleared out every 48 hours (relative to mtime).
Easily one of my best workflow habits.

What's the significance of permanent port?

I always have a bunch of jupyter lab instances running. If I have to hunt for the correct one, it's enough friction that I may decide "meh, this ephemeral idea doesn't need a quick exploration."

Why multiple instances? I usually just have 1 and multiple tabs with different notebooks open.

I do mine per-project, with a per-project conda env or venv

Ya, per project virtual environments is defn on my 'i should migrate to virtual environments before something blows up and all my notebooks don't work anymore' list.
