wild yeast, basically. with some lactobacillus mixed in (as others have said). you feed it with your bread.

wild yeast is everywhere: in your flour, skins of fruit, on ur skin, etc. Feed it with some flour and water in a warm place, and the kinds that like to eat flour multiply. they make alcohol and CO2 when they eat the starches

A sourdough starter is basically a pet that gives you bread, pizza, pancakes, cinnamon rolls and crumpets (among other things) whenever you want it (providing you want it after a lot of prooving).

Basically you ferment with not only yeast but with a lactic acid bacterial culture as well, so some of the glucose is metabolised to lactic acid (and maybe other things too). Gives your bread a flavourful tang.
