I'm not sure if it's a lisp quote hangover or some sort or ruby :symbol one but it also helps with ag/grep

I spent about 4 hours earlier this week on a Jenkinsfile because I had a groovy script in it, where apparently env variables require one quote style and global variables require another. Madness.
