Is there a specific term for the phenomenon by which people increasingly believe they have *heterodox* beliefs even though everyone they surround themselves with thinks the same way they do and, once conditioned for basic demographic characteristics, theyre probably just default?

I think striving for heterodoxy is the root problem. It is dumb, people should strive for truth. If everybody told you NOT to jump off the Brklyn bridge would you? Once you do the initial dumb thing, then you can do all sorts of additional dumb things as you describe.
