Pretzels aren't really pretzels unless bathed in a lye (or other alkali) bath.. the transform changes the texture .. a quick fakey way you can do it (good for Asian noodles as well) is transform baking sodahttps://www.seriouseats.com/recipes/2018/11/baked-baking-soda.html …

Not sure about ratios, I think it's less concentrated, most pretzel recipes call for 20/1 water/lye I think, maybe start with 15/1 ??
