I have a friend who has so many random food issues. It's exhausting keeping up with their list of items that gross them out and they get kind of emotional about it if I accidentally offer them food with one of the many offending items. I feel it's points to underlying issues.

Yea. I think for some people it's an allergy and for some people its a preference masquerading as a preemptive need but as an outsider, I can never tell which is which so I treat it all as the former. But it's certainly frustrating sometimes.

Nah, we just know what we like! The two categories of food that make me physically ill: seafood and condiments//salad dressing. Everything else falls somewhere between "this is the greatest food, ever!" and a "no, thank you"-sized serving.

It’s a sensory processing issue for some people. I was ‘picky’ as a kid but it was basically that I would rather starve than process the new or unpleasant sensation. That’s why food can’t touch. It mixes the smell/taste/feel and creates a new process.
