Is there a tool to sniff some JSON and spit out a .proto? I'm not seeing one.

I wasn't really specific :( I meant taking raw json and spitting out a .proto definition file for me to use

Haven’t used this https://github.com/allegro/json-avro-converter … but it sounds like you want to be thinking in JSON instead of protbuf’s “binary coded XML” (my mental model of it) so I would recommended looking at avro in general https://avro.apache.org/docs/current/
