I'm still really excited by my cast iron... ...but, my apartment doesn't have much ventilation... ..and, as much as I'd like to pretend otherwise, air chronically-laden with a fried fat smell isn't actually enjoyable.
Today was sausage without anything else in the pan. I guess too high?

Yeah. Sausage has plenty of fat. No oil. I usually start cold with sausage and bacon bc of the fat content. Medium is plenty. Slow burn/heat through. You want the fat to cook off, not sear.
