Why is it that spanish people assume everybody speaks their language? Why do I get spanish guys sending me CVs and messages in spanish when all my communication is in english? This annoys me to no end

Probably because they surround themselves with Spanish in every channel (dubbing, translations), so it's the default language.

Yeah, I feel the same. Spain lives in a vacuum in terms of language, but common sense says: "maybe this guy doesnt speak my language?" Specially because the guy sending the message was into gamedev, an area with english as main language.
