Prepare a sell sheet for each game in a way that you can teach the game from it, and give it to them afterwards to help them remember it. I imagine this is still true for digital pitches.

When demoing, don't be afraid to stack the deck to create the situations you want to show.

Definitely what Manuel said. It’s super important to know the publishing history of different publishers. If your game, either thematically or mechanically, doesn’t fit what they typically publish, you might want to pass. All of this is great advice.
