Looking for a traditional roguelike (turn based, procedurally generated map, permadeath) for the Switch, checked out 100+ suggestions, only 2 matched. I now understand why some people are very fussy about the term.

Do they do a specific action when they land on that space? Do they dump all their fish in that space, or one fish per space as they move? This one is important. Do they do something special depending on the number of fish they put in that space.

No, there's no actions on those spaces. The piece moves between the big "fish tanks" on the board, and then you place in one of the two tanks you finish adjacent to. You're essentially just building sets in the spaces for scoring.

Collecting fish uses a different board, so the board above is purely dropping. But I don't think that makes a difference.

Remember that the main influence on this is the action selection. A rondel is a way to choose your action for the turn, similar to worker placement or playing an action card.
