I prefer to start by playing the game as designed, but I'm not opposed to trying variations as well as the whole group is aware of them. In rare cases where I thought variants definitely improved it, I have taught the game with them, but mention they're variants I recommend.

A notable example is Carcassonne, where drawing a tile at the end of your turn lets you plan until your next turn, or even having a hand of 3 tiles allows for more strategy and even some bluffing.
