anyone else have days where you're just Hungry? like it doesn't actually matter how many meals you have, your body is just like, "Nope. More. Keep it coming," until suddenly it's 2am and you're shoving handfuls of banana chips into your mouth in front of the cupboard?

Hard same. I had a medication change that impacted my sleep; have hopefully got it figured out now but still
