Did you clear the cache before uninstall? That might help. Unfortunately I don't know a lot about apple products, but I'll see if I can find something.
Guys, I've got three iPhone apps that suddenly look like this and won't open. Deleting to reinstall doesn't work, as the phone thinks they're still there. No updates pending for any. Help?pic.twitter.com/4FGdphXoFG

Also, this is going to sound incredibly stupid, but have you turned it off and back on again? I do know that sometimes with iPhones that's all it takes to restore an app.

I have done this, and no dice!

Ok, did figure out that those apps have reverted back to the default icon. Still trying to find a fix. Which OS are you running?

iOS11

I know you tried switching on and off, but did you try a hard reset? i.e. holding Home and Power button together? Solved a lot of iPhone dramas for me back when I had one

+1 for hard reset. I had a problem with an app recently caused by an update failing, and that worked wonders.

(also, signing out of your Apple ID before the hard reset, then signing back in afterwards apparently will clear some of the cached data)
