Wrong kind of immigrants. I know there are Greek majority areas in the US, but they are small. Brit is largest background, then German, Scandi, Italian, and I think Pole. Spanish speaking areas are all pretty much Mexican where the border crossed them.

In most of the places I’ve lived it’s stupidly hard to get ingredients for a lot of basic Italian dishes. Italian italian, not Italian American. They’re two different cuisines. I don’t know the details, but I know Greek vs Greek American has a similar divide
