When I offer rep, I have to have a vision for that writer's career, not just the one book they're querying me. So it's always helpful on the call to hear what the writer's career goals are, what they enjoy writing. You want an agent who is there for the long haul.

Is talking about what other projects that writer has going on part of that conversation? Does it help you or hinder if they've got widely varied interests in novels they see themselves writing?

Once I'm interested in a writer's work, I'd likely schedule a call where I talk to them about their career goals, what their WIP or what they plan to write more of. If it is TOO varied outside of my realm of expertise then yes... I might not be the right agent.

Question: does asking about their WIP mean you take queries from writers with incomplete manuscripts, or that you ask what else they’re working on addition to a completed book?

No, the ms being queried must be complete and polished. I ask about future works in addition to the current ms.
