It's quite surprising, actually. He doesn't speak like "ya", "ma", "anythin", "ain't", "y'all", etc. He may speak with a strong Southern accent, but the comic writer does not describe it in the text dialogue. I would love to follow his way of writing. It's much easier for me.

"'Ey Hanzo, 'm goin' ta Taco Bell, y'want anythin'?" is harder to read than "Hey Hanzo, I'm goin' to Taco Bell, you want anythin'?" for example, if that makes sense

I know that. Probably those fic writers want to write McCree's dialogue as close as that of his speaking. I understand what they intend to do and respect that. However, for a non-native English speaker like me, it's safer to avoid using dialect with which I'm not familiar.
