You are not spiritually sensitive if you make a value distinction between animal and plant life. You should feel exactly as deep a gratitude and blessedness for an onion or tomato having sacrificed itself for your nutrition, as you do for a cow. That’s the spiritual part.

Not necessarily a value distinction, but a different order of complexity. People have always distinguished between animal, vegetable and mineral souls. I hear your point about vegetables though— Soviets did experiments that found cabbages would emit electrical “screams” when cut

Life is a fractal pattern of killing to keep on living, and as long as you're present and grateful, you're as spiritual as you'll get regardless the dish. (I might be ignorant of some other dimension of spirituality and plant-basedness; the ethical side seems most prevalent.)
