The phrase has always bothered me because to me it sounds like you just don't care about anything.

Same! But that's the thing―it's not about not caring; it's about caring to the fullest, so that when eventually what you care about will pass on, you're content with it because you had such a lovely time with it. 😄
Caring about things is different from clinging to them, because when you cling to them, you're not allowing them to flourish in their totality. Much like what Osho said about appreciating the beauty of a flower: if you pick it up to possess it, it dies.
