I don't exactly understand the left-truncatable part, someone here to spread the wisdom?

It means, that the number is always a prime, even if you take away the leftmost number. You can delete the first digit, and it is still prime. From that number you can again delete the first digit and it is still prime. And that works for the whole number, down to the last digit.

Models, in the case of prime numbers, are particularly hard to build. That's probably what fuels mathematicians' minds: they like a good challenge.
