That's exactly the point: you can't even do that, and a vacuum is the greatest pressure diffential achievable. So there's not way to suck a liquid higher than the estimate of the original post with a straw

It’s a simple approximation with a poor diagram. A more accurate diagram would ask “What will be the equilibrium height of fluid above the water line in a straw resting at the surface”.
