How's the replay value? I'm a little worried about buying board games that are irreversibly changed during play.

you play it ~10 times and the board is useless forever. Zero replay value. But that's the point.

12-24, depending on how much you win. I'm not sure how many games I've played that often, so that's kinda replay ?

I'm sure my fear of running out of plays left on a board game is on the irrational side, but it still gnaws at me.

Risk Legacy has exactly 15 plays in the main campaign, but you finish with a playable customized board. Maybe better?

'Course, that's a competitive game vs a co-op one, and a bit different in how it works and unfolds. (Also, I haven't finished)

legacy games carry stuff over between sessions for a big overarching campaign; pandemic finishes after about 12-24 games. 'w'

The boards are both world maps, but they're not similar. Pandemic is cooperative. There IS a Risk Legacy too, though
