True, but most problems we are facing now in the world wouldn't have existed if people would have used their head more often.
true that most problems we have would vanish if average IQ was much higher. And a lower average IQ would cause even more problems.

Certainly higher IQ correlates with better critical thinking skills, but I believe just like math it can be taught to anyone.

mathematical thinking can be taught, but not to everyone. Critical thinking is likely to work in the same way.
