Do you pronounce
like fun-guy, or fun-jy? Or maybe even fun-guee or fun-jee? I think it should be fun-jy

I think the original was foon-ghee. I call it fun-ghee, but I am in the minority.

Yup, in Italian is foon-gee, hard g, spelled as funghi. A single one is foon-go. Pizza prosciutto e funghi is delicious! Also known as pizza boscaiola, which means lumberjack pizza.

I pronounce it the Italian way with the accent, it feels closer to latin and I can't be wrong

There's no consensus about Italian pronunciation being good for Latin. Anyway the Italian word is spelled "funghi" (plural) and the "h" makes it pronouncing fun-gee.

As others pointed, when in doubt, ditch English inconsistent rules and use the original language, e.g. Latin For the words original from English, you need to know the specific set of rules used to make them, e.g. ghoti
-
Cicero Latin being "foon-ghee" and Church Latin being "foon-jee", of course
