There are three kinds of AI we could be making. The first kind is cognitive automation: encoding human abstractions in a piece of software and using it to automate tasks normally performed by humans. Nearly all of current machine learning & symbolic AI fall into this category.

The second kind is cognitive assistance: using AI to help us make sense of the world. AI to help us perceive, think, understand. I believe this is where the true potential of AI lies. Today, some applications of ML fall into this category, but they're few and far between.

Google search, certain recommender systems, that sort of thing. Or image captioning systems for visually impaired people.
