What GoT did is popularization of genre. This is cool for all the people who love Sci Fi and Fantasy etc. It also killed the concept by showing how never ending series can bring money. Disclaimer: I started loving it, pushed myself to Season 4 and gave up then. I hate it now.

Most of the characters killed were historical, e.g Ceasar, Cicero, etc. BTW I liked Rome more than GOT, until they changed the actor playing Augustus, who was out of character, but the first season was truly amazing.

I remember participating in a discussion on writing.stackexchange about this very topic about 6 or 7 years ago: https://writing.stackexchange.com/a/12842/1719 The thread received 28k visualizations since then so imagine at least a few writers might have gotten some inspiration from it.
