What you're missing when you're just starting out as a software engineer isn't technical ability, it's perspective. Perspective on the lifecycle of codebases, on the business context (and sometimes social context) of how software is used, on the evolution of your industry, etc.

Perspective takes time to acquire no matter how smart you are

A lot of new software engineers don't realise how much of their time will be spent maintaining and debugging existing code. The opportunity to develop something new/from scratch is quite rare.

Is lesser ability and greater experience better than greater ability and lesser experience then?

I have been coming to that conclusion in my head, teaching myself how to code and build deep learning applications at home while getting my CS degree for years, but I don't have an actual understanding of what it takes to get a job in the field.

All it takes to "get a job" is to grind away on algorithm puzzles until you can "pass" interviews. Until the industry comes up with a meaningful way to actually figure out what kind of technical ability and perspective applicants have, the plan is to just ignore it. You can do it

Yup. Try explain to young guns that Excel VBA macros might quickly solve your problem now but 3 years down the line when someone is still using that spreadsheet and you get a call to come help with why it's not calculating, you will rue the spaghetti code you're making today.

For once, I disagree with your statement. This information should be provided by the business through contextualization of the new application/features at the project kick-off (incl. vision). What developers should acquire is "interest" & "critical thinking" to challenge.
