A talk gives you a chance for immediately exchanging feedback multiple times. This can lead to new creative ideas that would be hard to achieve by exchanging letters. I think this is also a valuable step in the process, before sitting down to writing.

I would rather have a beer than exchange letter. When I was doing math, the best intellectually creative tiles was when we spore for hours in front of a white board. Letters are just too slow to allow "thinking together".

I agree that deep thinking is best done in writing, and I get that this statement is clearly an opinionated preference, but even though I agree with the first tweet, I don't agree that the best way to exchange knowledge with interesting people is via writing.
