Our intelligence is about as general as our senses and our motor affordances: it has a high degree of generality within the scope of experiences and problems that humans encounter -- a thin slice of reality. Replaced in its broader context, it is extremely specialized.

The "specific context," for example, vision, is "the light spectrum absorbed and sensed by organic material." Which is a very narrow spectrum. Photoreceptor cells could have easily, and probably did, evolve multiple times.

You are correct. Photoreceptors and eyes with retinas have evolved multiple times.

Our reasoning seems to be closely connected to our senses and abilities to manipulate objects around us. However, we are capable of simulating a great deal more than that, like all of mathematics. Isn't it possible that our thinking is universal in this way?

We have more than general intelligence, that's what is called imagination and that's why art directors and authors come up with wild imagination in their books which is beyond the environment they can look and feel.
