This is closely tied to the consciousness hypothesis: we would only assume consciousness in agents that mirror ourselves, as we can only be certain of our own consciousness

If it's "something which is not me", how can I have it? What is "me" anyways?

That‘s a very empathetic view of a “soul.“ There are a lot of people who mean, “My consciousness and ego, apart from my physical body, which survives my body (and never dies).“ I agree that your definition is rational, but the self-interested version isn‘t interested in reason.

My soul = the me-ness of me. Your soul = the you-ness of you. For lesser beings: our willingness to assign them souls depends on mirroring. & I see the link to consciousness since it is also the me-ness of me. But “that which is not me...?” Artificial constraint? & context?

Where does this leave hyper-empathetic autistics? Or hypo-empathetic sociopaths? Do you think some people have more "soul" than others?

Can not agree. An isolated human can grow not knowing about empathy and still be conscious and have a soul. Sheldom Cooper has its own little soul too! https://goo.gl/images/yTxriU

Me = my brain (Cartesio), so we can't speak about soul as a different thing
