My one weird take in this space — which doesn't apply to Eleven Madison Park, as they're operating as a status symbol and a unique experience — is I think it's better for restaurants to go 80% plant-based than to eliminate meat entirely.

A lot of people won't go to a restaurant where they can't eat any meat! But you want them to come, and then realize they don't need meat, or need much of it, for a great meal.

The plausible world to get to is most people eat much less (animal-based) meat, not most people are vegan. Restaurants can really help with that by having great menus that are 80% plant-based, and the meat that is left is ethically raised and environmentally sustainable.

I was about to say exactly that. I love meat, but I could go veg on an instant as long as it is Indian food. Literally, veg Indian food is the most delicious food I've ever eaten in my life.

My 78 year old mom went nutritarian after my pops died in 2013. She lost over 100 pounds and her cholesterol went from 200+ to 110. I'd rather have tasteless food than a massive heart attack

The same is true, obviously, of much African, Middle Eastern, and Far Eastern cooking. It's not a factor of "so much less money driving creativity", it's a factor of "I don't have enough money to eat meat every day so I have to be creative".
