The French style of cooking is to use sophisticated techniques to transform simple ingredients into something refined. The Italian style is to use simple cooking to present amazing ingredients as they are. Who is to say which is better? I am to say. The Italians are better.

Coincidentally, the English style is the same as the Italian style, with only the slight difference being that they suck at it.
The irony is that he had a ridiculously florid writing style that for my taste could have gained a lot from taking his own creative advice expressed here. Somehow he knocked out it off the park with The Hobbit and the rest want remotely as good.

People don't know what French cooking is. It doesn't have to be a pretty tiny plate with nothing on it. People expect fancy so you get fancy but French cooking is traditionally generous
