English cooking was decently respected until the Puritans circa Cromwell destroyed English food culture by treating food purely as fuel. Afterwards they were still known for excellent fire-roasted meats until they ran out of firewood and lost that too. Tragic, really.

Techniques are more important than recipes. The Chinese do great liver dishes but it was the Portugese who taught me to cut it with chicken blood to get rid of the weird liver taste.

Or instead of using nasty blood you might want to keep the liver in cow's milk for at least 30 minutes for the same result.
