It takes people to validate orgs for EV code signing. Wonder if they'll offer that and at what price.

For EV SSL sure. But there are very real differences and benefits for EV code signing. Chief among them the HSM requirement and the instant Smart Screen reputation.

Not sure I understand. Why would I want to enable Google to man-in-the-middle my servers and sites?

That's not how certificates work.

More useful would be to explain then why they can provide people with certificates without knowing their private key.

More useful than what? I can't tell if you're saying "People don't understand how Certificates work" or something else. (The certificate contains only the public key.)
