We're having a bit of a crisis Chez Wheel. As you may know, my trick to cooking turkey is bacon. I got a for-my-farmers miniscule turkey yesterday--8 lbs--in lieu of a chicken. Without thinking about bacon. Now trying to remember all the crazy turkey recipes I never tried.

It was a tweet to Ted, who lives a mile away from me and from where those turkeys are sold. They're very good.

I have. They have them at this time of the year? Weighing 8#?

They had just one. And I was happier to get that than an inferior chicken. Sometimes their animals don't figure things out (I remember they used to breed conventional w/heritage chickens bc the latter had no survival skills). Apparently that was the case with this one.

Got it. But if you're out of bacon....

If no bacon & no brining, then get as much fat (olive oil/butter/bacon grease) and salt under the skin over the meat as possible.

I did sliced salami once under the skin of a chicken. It did what it was supposed to, but it was a little too weird.
