Why do people believe they know the universe of emails RU, which started hacking in July 2015, had by March (actually April) 2016?

There is zero public record of known universe of emails stolen by RU, only emails released, and most people fuck that up royally.

I take your point to be The Professors emails for George P could have been DNC, Hillary's server, something else, or BS. I agree.

FWIW the Times broke story of Hillary's secret server in March 2015. If the Professor was BS ing Hillary emails was an obvious target.
