I'm not sure many people appreciate the culinary beauty of a potato fresh out of the dirt; those potatoes in the grocery store are a lot older than they look. Love cooking; it takes me away from the madness & makes me feel just a little bit in control. Every little bit helps.

Every time I go to France I renew my fascination with the many things they do w/potatoes. I come back recommitted to matching it all. But then fall back into the roasted potato grind.

But the simplicity of a roasted potato, with the perfect amount of crunch on the outside, creamy on the inside, is a thing of beauty. & not as easy as it looks! Lately, I've been crushing on French breakfast radishes from local farm, paper thin, on good bread w/Irish butter. Mmmm

Potatoes are odd. You would not guess you would or could eat them unless you first dug them up, then heated them until soft.
