I wrote a book that was supposed to take place during 2020 and 2021 and now I am wondering if I should revise it to include the pandemic or if I should rewrite it so that it's set in 2018/2019.

Yeah, I think that's the right call. Plus I'm so sick of thinking/talking/writing about the pandemic.
I think it will take a looooong time for us to make sense of the pandemic. So backdating it to 2018-2019 seems like a good bet. That way you can focus on what you wanted it to be about rather than this whole new uncertain world.
