Rewatching The Expanse and it occurs to me that the central conceit of most pandemic movies/tv series etc is that one person got away to infect everyone else.

Like Kendra says, the Expanse books are outstanding. Also there are lots, it's an 8(?) novel series, the last currently under construction.
