not a def but here are some examples you could include: bank/fund info, student records (but also letters of rec, incident reports), architectural plans for university/public buildings, any communication (esp w/ general counsel) marked "confidential" / "attorney-client privilege"

Lots of good examples pointed out already, but I'd add internet/search history to the list. Particularly with disk images of devices, there might be a lot present isn't strictly PII but is also not intended by donors for preservation/access
